21 Day Fix Baked Lemon Chicken

INGREDIENTS

  • 1-2 lbs. skinless boneless chicken breast
  • 1 lemon
  • ¼ cup extra virgin olive oil
  • 1 tsp black pepper
  • 1 tsp dry Italian seasoning
  • 1 clove or 1 tablespoon of minced garlic

DIRECTIONS

Preheat the oven to 350F. Cut half the lemon in half, squeeze one half of the lemon into a bowl, cut the other half into thin slices and put aside. Mix the oil, pepper, seasoning and garlic in the same bowl as the lemon juice.

Put the chicken into a glass baking dish, pour the contents of the bowl over top, then take the lemon slices and evenly distribute them over top of the chicken.

Cover the dish with foil and bake for 30 minutes.
